But even if the homemade sushi will never be at the level of the sushi of the best sushi restaurants in New York or Tokyo, the advantage is still there:

Are you lucky enough to have access to sushi-quality raw fish? It's great, but don't worry, you can always make sushi at home if you can't find it. Shrimp tempura rolls are a wonderful idea for a feast, and you can even make a Californian Roll or a veggie roll. The Philly roll isn't bad either, it's the one with smoked salmon, cream cheese, avocado and cucumber.
And if you want to try something a little different, you can always make Korean Kim Bap. It's quite similar to sushi, but without the raw fish .
So, what rice for sushi:
Sushi specialists will tell you that preparing the perfect sushi rice is just as important as selecting and preparing fresh fish. For them it's an art form: knowing how to make perfectly soft and sweet sticky rice is the key to good homemade sushi .
First, make sure you buy short-grain white rice (medium-grain rice is also acceptable) labeled "sushi rice" or risotto rice. Short-grain rice is starchy and absorbent, which makes it sticky.
Chef's tip : to make sushi at home, you can let your rice cooker take care of cooking the rice: from the moment you have a more or less decent rice cooker, the results will be satisfactory!
To start, combine the rice and water in the rice cooker.
Many people are adamant and say to wash the rice well, but you may see the instructions on some rice packets asking to leave the rice and water as is... You can of course wash the rice if you feel more comfortable.
While the rice cooks, all you need is a little seasoned rice vinegar. If you Google ' sushi rice ', you'll see that most recipes call for rice vinegar, salt and sugar, which you dissolve together and season the rice with.
For the 1.5 cups of uncooked rice used, about 1/4 cup of rice vinegar is ideal. Add it to the rice.
Gently stir the rice to distribute the rice vinegar, trying not to crush or flatten the rice.
Voila, it is ready to be used for sushi!
Which seaweed to use for sushi recipes?
Of course, you need the right type of algae.
Be sure to take specific seaweed for making sushi, which should be indicated on the package.
Spread the seaweed with a layer of prepared sushi rice, and gently flatten it with a rice paddle (but don't mash the rice).

How to cut raw fish for sushi:
First, cut the fillet in a straight line, then cut this piece in half through the center to obtain a small strip (about 6 cm long and 2.5 cm wide and 1 cm thick).
Place the ingredients of your choice on the rice. For example salmon, avocado and cream cheese ...
Roll it tight, using a bamboo mat. This is a specific kitchen item, but you can find a good one for less than €2 on the internet, so it's worth having one on hand.
If you don't have one, you can use parchment paper or plastic wrap, but you won't be able to wrap it as tightly, so it's a good idea to buy one if you plan to make sushi regularly.
Then use a sharp knife to cut the sushi roll into pieces.
Chef's tip: avoid shearing the flesh of the fish by moving the knife back and forth: cut the fish in one motion, pulling the handle towards you.
What to serve with your sushi?
That's it, you're ready to eat the rolls with soy sauce, pickled ginger and wasabi, according to your desires!
Can you keep sushi overnight?
This is not highly recommended, as the longer you keep raw fish, the more likely you are to develop bacteria and get sick. If you are full and you have some ingredients left, you can eat the rest of the fish, thinly sliced like sashimi, because it is the most precious part, and leave the rest of the ingredients. Also, refrigerated rice becomes tough and dry, and does not reheat well. Sushi should therefore be eaten freshly prepared.
Can you make sushi without fish?
Yes, you can make vegetarian and even vegan sushi recipes. There are tons of ideas online, but avocado, cucumbers, and carrots make great filler ingredients.
