Why a Kiritsuke?

In Japan, the Kiritsuke is often associated with great chefs. It is a handy and versatile knife that can cut all kinds of different foods, it is known as the master chef's knife.
It is used regularly for all daily cuts: meat, vegetables, fish... It is a multi-function knife.
One of the particularities of the Kiritsuke: It was created by taking inspiration from katanas, the swords of the Japanese samurai, hence its singular blade in the shape of a point.
This is the Japanese version of the all-purpose chef's knife, it's a wonderful addition to any knife collection.
